Chinese Style Salad

1 zucchini
1/2 cucumber
1/2 red or yellow pepper
1 carrot
2 spring onions, sliced
handful of bean sprouts
green salad leaves
Dressing:
1 tablespoon wheat free tamari sauce
1 teaspoon sesame oil
2 tablespoons water
1 clove garlic, crushed
Cut zucchini, carrot, peppers and cucumber into long thin strips. Toss with sliced spring
onions and rinsed bean sprouts. Mix together dressing ingredients and drizzle over salad.

Serves one.
