Carrot Zucchini Loaf

Makes one large loaf or two smaller loaves.

DRY INGREDIENTS

1 cup whole wheat flour
½ cup quinoa flour
2 tbsp ground flaxseed
1 ½ tsp cinnamon
½ tsp nutmeg
1 tsp baking soda
½ tsp salt
1/8 tsp baking powder

WET INGREDIENTS

2 egg whites
½ cup brown sugar
2 tbsp coconut oil
½ cup unsweetened applesauce
1 tsp vanilla
1 ½ cups grated zucchini
1 ½ cup grated carrots

Preheat oven to 350° F. In one bowl mix together dry ingredients. In another bowl mix together wet ingredients. Slowly stir dry ingredients into the wet mixture. Pour into greased bread pan(s) and bake at 350° F for 45-60 minutes or until toothpick comes out clean.
