HONEY ROASTED CHICKPEAS

Ingredients:

1 15 ounce can chickpeas (garbanzo beans)
2 tsp canola oil
1 tsp ground cinnamon
2 tbsp honey

INSTRUCTIONS
Preheat oven to 375 degrees F. Drain and rinse chickpeas well, running them under cold water until the starch is removed (the foam dissipates). Spread out chickpeas on a paper towel to dry. In a bowl, whisk together the oil and cinnamon. Add chickpeas to the bowl and stir until all of the chickpeas are evenly coated. Spread out the chickpeas on a large baking sheet and roast for 35-40 minutes, or until they are crunchy and no longer soft in the middle. Place hot chickpeas in a bowl and coat evenly with the honey. Put chickpeas back on baking sheet and allow to dry. Serve immediately or store in an airtight container at room temperature.
