1 1/2 pounds green beans, trimmed and cut
2 tablespoon peanut oil
1 tablespoon toasted sesame oil
1/2 pound firm tofu cut into 1/2 inch cubes
1 tbsp. grated, peeled ginger
3 cloves garlic, minced
Pinch of red pepper flakes
Juice of half a lemon
2 tablespoons tamari or soy sauce
2 tbsp. Sweet Chili Sauce
Heat a wok or a large skillet over medium high heat. When the pan is hot add the oils and heat until just before the smoking point, when the oil begins to shimmer. Add the tofu and stir-fry until it starts to turn golden brown. Add the ginger, garlic and red pepper flakes and mix well. Add the green beans and stir-fry for about 4 minutes. Add the soy sauce, sweet chili sauce and squeeze in the lemon juice. Cook, stirring, until liquids reduce slightly and the beans and tofu are glazed.
TIP: For a heartier dish, serve over steamed brown rice.
