Thai Salad

12 oz cooked turkey, chopped
4 tablespoon Thai fish sauce
4 tablespoon limejuice
3 tablespoon baker’s sugar
1 red chili seeded and finely sliced
4 spring onions finely sliced on diagonal
1/2 red onion finely sliced into half rings
Salad: shredded Iceberg lettuce
Small bunch fresh cilantro
1/2 cucumber seeded and diced

Place turkey in bowl. Mix fish sauce, lime juice and sugar together. Add chili and
onions and pour over turkey. Mix well and leave to marinate for up to 30 mins. Mix
together the lettuce and cilantro and arrange on four plates. Scatter over cucumber.
Spoon over turkey and dressing and serve.
