scrambled tofu

Breakfast

Ingredients:

1/2 block extra-firm tofu, well drained
1/2 tomato chopped
1/2 tbsp olive oil
1 clove garlic, minced
1 tbsp nutritional yeast
1/4 teaspoon turmeric
1/4 teaspoon ground cumin
1/4 teaspoon paprika
1/8 tsp salt

In a small bowl, mix together nutritional yeast, turmeric, cumin, paprika, and salt. Set aside. Heat the olive oil over medium-high heat. Add garlic, and sauté about 2 minutes. Crumble tofu into the pan, breaking it up into small pieces with your hands. Add tomato, and cook until tofu is golden brown. Add seasoning mix to tofu and stir well, until color is evenly distributed. Continue cooking until the tofu absorbs the nutritional yeast.
