2 cups edamame, shelled and cooked
1 cup fresh corn, removed from cob
1/4 cup red onion, chopped
1 cup cherry tomatoes, sliced
1/4 cup fresh cilantro
1/2 tsp salt, or to taste
1/2 tsp black pepper, or to taste
1/4 tsp cayenne pepper
2 tablespoons lemon juice
2 tablespoons lime juice
2 tablespoons olive oil

To a large bowl, add all ingredients and mix well to combine. Taste and adjust seasonings as necessary. Salad may be served immediately although the flavors taste even better the second day. TIP: this salad is easy to customize. Try bell pepper, avocado, green onion, green beans, or carrots. A sprinkle of feta adds rich flavor. Add quinoa, couscous or pasta to make this a meal.
