SPINACH FRITTATA

Breakfast

Ingredients:

4 large eggs
1/4 cup unsweetened almond milk
1 garlic clove, minced
Extra-virgin olive oil
2-4 cups fresh spinach
1/4 tsp paprika
1/4 tsp red pepper flakes
1/2 tsp dried thyme
14 tsp salt
14 tsp pepper

INSTRUCTIONS
Preheat the oven to 450 degrees. Crack the eggs into a medium bowl and whisk them with the milk, salt, pepper, minced garlic, paprika, thyme, and red pepper. Set aside. In a cast iron skillet, sauté the spinach in a bit of olive oil until the spinach is mostly wilted. Add a pinch of salt. Pour the egg mixture over the cooked spinach and gently stir. Bake in the oven until it puffs up and a toothpick inserted in the center comes out clean, about 20 minutes. Remove from the oven and let cool. Slice and serve.
