Ginger Glazed Mahi-mahi

Ingredients:

Four 4 oz. fillet of mahi-mahi
Salt and pepper
2 tsp ginger grated
1/4 cup light soy sauce
1 clove garlic crushed and minced
1 tbsp olive oil
1/4 cup honey
3 tbsp balsamic vinegar

INSTRUCTIONS
Pat fish dry with paper towel and sprinkle with salt and pepper on both sides. Let it sit for 10 minutes and preheat oven to 450⁰ F. To make the ginger glaze, combine all the ingredients (ginger, soy sauce, garlic, olive oil, honey, balsamic vinegar) in a wide, shallow bowl. Brush some of the ginger glaze mixture all over the mahi-mahi fillets and set the fish in the bowl to let it marinate for about 10 minutes. Line a baking tray with tin foil and arrange the fish fillets on the tray. Bake for 12 to 15 minutes. While the fish cooks, pour the remaining ginger glaze mixture into a sauce pan. Heat and simmer on low heat until the liquid reduces to half. Remove the mahi-mahi from the oven and plate. Spoon remaining ginger glaze over the fish. Serve with sides of your choice, such as steamed rice and veggies.
