Portobello Fajitas

Main Courses


2 tbsp taco seasoning
2 tbsp olive oil
1 lime juiced, 1/4 cup
1 1/2 lbs portobello mushrooms, cut into thick 3/4-inch slices
1 red onion, sliced
1 red bell pepper, sliced
1 orange bell pepper, sliced
1 yellow bell pepper, sliced
small flour tortillas
salsa of choice as garnish
fresh cilantro, chopped

Preheat oven to 450°F. In a large bowl mix the taco seasoning, olive oil, and lime juice to create a marinade. Toss the mushrooms, onions, and peppers in the marinade until evenly coated. Spread mushrooms, onions, and peppers across an oiled baking pan and roast for 20 minutes or until tender. To add a bit of char to the mushrooms and veggies, broil for another 3 minutes. Serve with warm tortillas, salsa, and fresh cilantro.
