Pan Seared Halibut with Mango Salsa

Ingredients:

For Salsa
1 1/2 cups mango, peeled and diced
1/4 cup red onion, diced
1/4 cup red and green peppers, diced
1 tablespoon fresh lime juice, (juice from 1/2 lime)
1 tablespoon extra virgin olive oil
1 pinch ground cumin
Salt and pepper to taste

For Halibut
3 tablespoons olive oil
4 7-ounce skinless halibut fillets, patted dry
Salt and pepper to taste

INSTRUCTIONS

Preheat oven to 450º. Combine salsa ingredients in a medium bowl and gently stir. Season to taste with salt and black pepper and set aside. Heat olive oil in a large, oven-proof skillet over medium-high heat until almost smoking. Add halibut fillets, without crowding, to the hot skillet. Be careful as the oil will cough and sputter. Sear for 3 minutes. Transfer skillet to 450º oven for 4 to 5 minutes more, until fish is opaque in the center. Remove from oven and flip each fillet. Allow to rest for a moment while the hot oil lightly browns the other side. Transfer fillets to plates, seared side up. Season lightly with salt and black pepper. Stir salsa and spoon over each fillet. Serve immediately.
