CHICKPEA CRUST PIZZA

1 cup chickpea flour
1 cup warn water
3 tbsp olive oil
salt and pepper
1 cup tomato sauce (or pizza sauce)
4 oz shredded mozzarella cheese or vegan cheese
1/4 cup sliced mushrooms
1 small tomato sliced
handful of fresh spinach
INSTRUCTIONS
Preheat the oven to 450° F. While the oven heats up, put a 12-inch cast iron pan in the oven to heat the pan. This will help to create a crispy crust. Add the chickpea flour to a medium mixing bowl with a pinch of salt and pepper. Whisk the flour mixture while slowly pouring in one cup of warm water. Let the batter sit for a few minutes to thicken. Once the pan has been heated for about 10 minutes, carefully brush the hot pan with 1–2 tablespoons of olive oil, coating the bottom completely. Add the remaining tablespoon of olive oil to the chickpea flour and whisk lightly. Pour the batter evenly into the pan, and then bake for 12–15 minutes until the edges begin to appear golden brown and crispy. Remove the pan from the oven, and top the crust with the tomato sauce, cheese, tomatoes, mushrooms and spinach. Bake the pizza for 10–12 more minutes, until cheese melts. Remove the pizza from the oven and let it cool for a few minutes. Carefully lift it from the pan and transfer it onto a cutting board. Slice and serve immediately.
