Main Courses


1 large head cauliflower (cut into small florets)
1 zucchini cut into 1/4 inch rounds
2 tbsp olive oil
Sea salt
Black pepper
1 1/2 cups marinara sauce
2 cups mozzarella cheese (shredded) (can use vegan cheese)
1/2 cup cherry tomatoes (sliced in half)
Handful of fresh basil (optional)

Preheat the oven to 425° F. In a casserole dish, toss the cauliflower florets and zucchini with olive oil, sea salt, and black pepper. Arrange evenly and roast in the oven for about 25 minutes, tossing halfway through to brown evenly. Pour the marinara sauce evenly over the vegetables. Sprinkle with shredded cheese, then top with sliced tomato. Place the casserole back in the oven for about 10 minutes, until the cheese is melted and golden. Garnish with fresh basil to serve.
