VEGAN SWEET POTATO AND RED LENTIL DAL

Ingredients:

2 medium-sized sweet potatoes
2 cups cherry tomatoes
3 cups vegetable broth
1 cup coconut milk
1 cup split red lentils
2 tbsp coconut sugar
2 tsp yellow curry powder
2 tsp ground turmeric
1/2 tsp ground cumin
1 tsp ground ginger
1/2 tsp red chili flakes
1/4 fresh cilantro

INSTRUCTIONS
Peel the sweet potatoes and cut into cubes. In a large pot, bring the vegetable broth to a boil and add the sweet potatoes, cherry tomatoes, coconut sugar, and all the spices. Reduce heat to medium and simmer covered for around 20 minutes, stirring occasionally. Rinse red lentils and add into the pot along with coconut milk. Let the dal simmer for approximately 15 minutes, until the lentils have fully cooked and vegetables are tender. Top with cilantro. Serve alone or with rice.
