Vegetable Gratin

Side Dishes

It is of great benefit to eat a diet free from red meat. Many vegetarian recipes make a
wonderfully delicious meal.

1 lb red cabbage, sliced very thinly
2 apples, peeled, cored and roughly chopped
2 medium onions, peeled and roughly chopped
4 sticks celery roughly chopped
2 rashers lean bacon, chopped
2 teaspoons caraway seeds
2 teaspoons horseradish
10 fl oz fat free plain yoghurt
Salt and pepper
Preheat oven to 325 F. Mix first six ingredients in a bowl. Combine horseradish with
yoghurt, season and spoon over vegetables. Mix together and transfer to ovenproof dish.
Bake 45 minutes.
