Vegetable Kebabs With Feta Dressing

These make a great accompaniment for a barbecue meal. The dressing can be used to
serve with grilled chicken or fish. Soak the wooden skewers in water for 30 mins before
use to prevent them burning on the BBQ!
3 yellow peppers cut into large squares
14 oz organic new potatoes, cooked and halved
2 red onions, peeled and quartered
Olive oil
4 tablespoon olive oil
7 oz feta cheese, diced
Zest and juice 1 lemon
2 tablespoon fresh basil, roughly chopped
Salt and pepper
First make dressing. Thread vegetables onto soaked skewers and brush with a little
olive oil. Barbecue 10 minutes or until vegetables are nicely browned. Serve with
dressing on the side.
