2 cups vanilla almond milk
1/2 cup chia seeds
2 tablespoons agave nectar
1 teaspoon cinnamon, optional
1/2 teaspoon vanilla extract
1/8 teaspoon salt
Combine the almond milk, chia seeds, agave nectar, cinnamon, vanilla, and salt in a large bowl. Stir until well combined. (Make sure the chia seeds are completely coated in almond milk in order to ensure proper absorption.) Cover and refrigerate for 2 hours. Stir before serving.
If you prefer a creamier texture, you can also use a blender or food processor to blend the pudding until smooth.
Experiment with sweeteners. Try maple syrup, honey, banana or dates to add sweetness.
Try different liquids. You can use coconut milk, rice milk, or hemp milk.
Mix up the mix ins. Add cocoa powder, nuts, fruits, flavors or spices to customize your creation.
Get nutty. Add in nut butters for a rich treat.
Power up. Put in some protein powder to turn this pudding into a filling breakfast or snack.
