NO BAKE BROWNIE BITES

1 cup (4 ounces) raw walnut halves
1 cup packed pitted medjool dates
3 tbsp unsweetened cocoa powder
1 tsp vanilla extract
1/4 tsp mint or peppermint extract
1/8 tsp salt
INSTRUCTIONS
Use a food processor to chop the walnuts and dates. Process for about a minute or until walnuts and dates become blended. Walnuts should remain chunky. Add cocoa powder, vanilla extract, mint extract, and salt to the food processor. Pulse until a thick, clumpy dough forms. The dough should start to come together into a ball. If not, add 1 or 2 tablespoons of warm water and pulse a few more times. Use a cookie dough scoop or spoon to grab one tablespoon of mixture and then roll it into a ball. Place each ball onto a small baking sheet or plate lined with parchment paper. Place the brownie bites in the fridge for 30 minutes to chill and harden. Serve immediately or transfer to an airtight container and store in the fridge for one week or in the freezer for up to three months.
